I couldn't resist after our cake discussion in class!

This was staring at me as I went to check my msn...Epley...it says cream cheese frosting for Red Velvet...just FYI:)

yes, a simple cream cheese frosting has become popular in some circles--in part because it is so simple. People shy away from cooked frostings these days in general. Nevertheless, a butter-roux icing is " typical .
